Guineas Associates were appointed by a catering operator in the contract catering market to mobilise a new contract and manage building and catering fit out programme. The process included developing client relations, developing new business and managing fit out costs.


The contract was a single venue with retail and hospitality catering and consisted of an existing cafe bar and function rooms and the development of a new retail facility. It included developing the menu with costed recipes and ensuring a smooth transition between outgoing and incoming caterer with no detrimental effect to customers.


The key tasks can be summarised as follows:-

  1. Review the existing operation, define customer base, recruit new team, build client and customer relations, produce a mobilisation plan with timelines
    and appoint suppliers.
  2. Produce a new cafe bar menu with full costed recipe bank and manage introduction with briefings to all team members.
  3. Produce hospitality literature together with new menus complete with full specifications and costings. Market the facility to potential customers and
    also implement food delivery service to onsite businesses.
  4. Manage the procurement and installation of equipment for existing facilities and produce plans, appoint builders and procure and manage the
    development of new facility.
  5. Liaise with local authorities over the contract transfer and new build process.

The project was for three months and the results achieved by Guineas Associates can be summarised as follows:-

  1. Managed the transfer of contract and delivery of new facility on time, below budget and minimal disruption for client and customers.
  2. Produced new cafe bar menu and function menus with full specification and costing together with branded “grab and go” offer.
  3. Delivered the project with savings to budget of £21k and in sourcing suppliers to the new contract managed to implement savings of £35k to other
    areas of clients existing business.
